Cinnamon Sugar Almonds





1/2 cup water
1 1/4 cups white sugar
1 tablespoon ground cinnamon
2 cups whole almonds

1.Combine the water, sugar, and cinnamon in a saucepan over medium heat; bring to a boil.


2.Add the almonds. Cook and stir the mixture until the liquid evaporates and leaves a dry candy coating on the almonds.





3.Pour the almonds onto a baking sheet . Separate almonds using forks.


4. Allow to cool about 15 minutes.


*For this to turn out, ALL the liquid must evaporate. the mixture turns from liquid to syrup to a stringy consistency, and then crystallizes onto the almonds. Be sure to stir consistently throughout... this process takes about 20 minutes.
